I love eggplants, it is not only delicious, it contain plenty of antioxidants (block the free radicals), folic acid (also known as vitamin B9) and potassium.
3 medium eggplants
2 tablespoon olive oil
2 garlic cloves
1 medium onion sliced
1 can of diced tomatoes
Salt and pepper to taste
½ teaspoon oregano
½ teaspoon dry parsley
Place the eggplants in a microwave safe dish, pierce each eggplant with tines of a fork. Microwave it for 2 minutes (high).
Let it cool down and slice them about ½ in.
In a skillet add olive oil and in a high heat cook the onion and garlic until browned.Add the sliced eggplants and the can of diced tomatoes and oregano.
Let is simmer for about 15 minutes or until the liquid has turned half.Add salt and pepper to taste.Sprinkle with dry parsley.
This eggplant dish can be served with parmesan cheese on top, with your favorite pasta.
If you feel that you need some “protein” you can add meatballs. I usually add some frozen chicken meatballs about 5-8 minutes through the cooking.
