Simple and Nutritious Black Rice Bowl

2018-02-12T17:38:15+00:00 Asian Inspired Recipe, Pasta and Grain|

Have you ever tried black rice?  Black rice has a nutty and slightly chewy texture as compared to regular rice and it is packed with nutrients… I had black rice once in a local restaurant, since the black rice was mixed with white rice and quinoa, I could not tell the “real” texture of it. Well, I got very curious and it is when the search for the black rice started...after checking into a few stores I finally found it at Sprouts, one of my favorite places to buy organic vegetables and fruits.  I was so happy to find organic black rice selling by the bulk and yes, it is a bit more expensive than your regular white rice, but [...]

Trader Joe’s Gnocchi with Sous Vide Chicken

2018-02-16T11:50:27+00:00 Pasta and Grain, Poultry, Sous Vide|

Have you ever tried Trader Joe’s gnocchi? Well, if you like gnocchi you should give it a try…I must confess it was better than I expected. As a matter of fact, this is my second time cooking it and this time I dressed it with peas, roasted sugar tomatoes and sous vide chicken. This is particular great especially if you are pressed for time (like now getting ready for the holidays…), in a short time you are ready for an almost “gourmet” dinner, considering that you have in your refrigerator roasted sugar tomatoes and in the freezer green peas, sous vide chicken and a bag of Trader Joe’s gnocchi. Don’t panic if you do not have the ingredients listed…you can [...]

Glutinous Rice with Chinese Sausage

2018-02-16T15:35:55+00:00 Asian Inspired Recipe, Gluten Free, Pasta and Grain|

This is a recipe for a traditional glutinous rice known as sticky rice which is an staple in the Chinese cuisine which sausage, chicken or pork can be added. Have you ever had glutinous rice? In spite of the name “glutinous” it does not contain gluten at all, like all the other varieties of rice. Glutinous rice is grinded to make mochi flour which is a very popular ingredient in many Asian desserts and even savory ones. I grew up with glutinous rice and its derivatives…I love all the “chewy” food that you can make with it. Recently I shared the “pearl meatballs” recipe which the meatball (any of your choice) is coated with a layer of glutinous rice. Today, [...]

Farro Salad with Roasted Tomatoes

2018-02-07T03:32:19+00:00 Pasta and Grain, Side Dish, Vegetarian|

This is such a simple and yet tasty salad, farro is used as a base grain. It is loaded with delicious oven roasted grape tomatoes marinated with olive oil, garlic and thyme. This can be served as a meal by itself or as a side dish. I love the idea of adding roasted grapes tomatoes; they are naturally sweet which gives this farro salad a touch of sweetness. I think this salad will be very suitable during summer months along with any BBQ. Now back to farro…farro is a kind of wheat, it was a staple food in ancient Rome and it’s believed that this was a grain of choice for the Roman soldiers thousands of years ago. In spite [...]

Homemade Spinach Pasta

2018-02-09T13:00:58+00:00 Freeze Ahead, Pasta and Grain, Vegetarian|

Let me make a confession, this is not my first pasta…I made egg pasta once before I attempted to make this spinach pasta. It was so much fun playing with the dough, passing the dough over and over again through the pasta machine. Cutting it using different settings that I forgot to take pictures… I want this spinach pasta to be the “star” of this post, therefore, after I cooked I just served with a drizzle of olive oil and lots of shaved pecorino cheese…nothing fancy… Since I made enough pasta for a big crowd, I froze them into small “nests” and already used most of it with different sauces. Making pasta seems overwhelming, but in reality it is very simple. [...]

Curry Chicken with Udon

2018-02-09T13:00:39+00:00 Asian Inspired Recipe, Pasta and Grain|

Curry Chicken with Udon Noodles and Vacation Pictures Part II This is one of my husband favorite dishes…he claims that he could eat this curry everyday…I still have to test this statement. Actually it is very simple and yes, it is very tasty, but I could not see myself eating this everyday… This time I served with udon noodles, but you can serve over rice, pasta…in another words, any kind of carbs. In this recipe I added extra curry powder for flavor and spiciness enhancement. You can use only the curry cubes if you wish, especially if you are serving to kids. Ingredients: 3 chicken breasts, cut in big chunks 6 small red potatoes, cut into quarters 5 carrots, cut [...]

Low Caloric Content Rice

2018-02-10T01:34:59+00:00 Pasta and Grain, Simple Ideas, Vegetarian|

Yes, you can lower the calories in rice by changing how you cook it! For the longest time I wanted to share with you about a method used to lower rice calories…not long ago a team of scientists from Sri Lanka have developed a simple way to cook rice that could reduce the calories absorbed by the body by up to 60%. A little background…rice contains two types of starch: digestible and resistant. The digestible starches can be quickly broken down by our bodies, turn into glucose and store as fat if we do not burn it (increase weight or obesity). The resistant starch cannot be digested, they just pass through the large intestine therefore not absorbed by our body. [...]

Stir Fry Wheatberries

2018-02-02T00:56:26+00:00 Asian Inspired Recipe, Pasta and Grain, Side Dish, Vegetarian|

Asian Stir-Fry Wheatberries with Eggs and Chinese Sausage This is a very simple and fast recipe considering that you have cooked wheatberries. The recipe is similar to the Egg Fried Rice with Chinese Sausage…and it is great as a main dish since it contains veggies and protein. Wheatberries are wheat, I mean the whole wheat kernel except the hull. I personally like to wash and soak the wheatberries before cooking, usually overnight. Wheatberries are chewy and packed with nutrients and dietary fiber, therefore much healthier than plain rice. So if you like wheatberry it is good to cook a big batch and use throughout the week in salad, soup or stir-fry. Ingredients: 1 cup wheatberries 3 to 4 cups water Pinch [...]

Chinese Sausage Fried Rice

2018-02-02T00:56:08+00:00 Asian Inspired Recipe, Pasta and Grain, Side Dish, Vegetarian|

I love rice dish, and this one is so easy and simple to make, particularly if you have leftover rice. I added some Chinese sausage to this rice, but you can add chicken, pork, shrimp or even bacon…whatever your palate calls for. The nice about this stir fried rice is that the rice grains are covered with a thin layer of egg…yum! This is sure a very simple dish to put together especially during this holiday season, where life seems busier than usual with parties, baking and lots of shopping…so get your ingredients ready and make sure that you make extra for your next day lunch…simply delicious! Ingredients: Approximately 2 cups of cooked rice, preferably long grain 1 tablespoon soy [...]

Shrimp with Red Quinoa

2018-02-01T14:07:24+00:00 Fish and Seafood, Gluten Free, Pasta and Grain|

This is a very simple recipe packed with protein…delicious nutty quinoa loaded with veggies, topped with a gingery, lemony shrimp. It is gluten free and very healthy! I used frozen ginger and frozen lemon…I just find it very easy to store and use. Just grate the frozen ginger or lemon (whole) using a microplane grater/zester on the shrimp…it is clean and totally trouble free. No need to use any chopping board… Oh! Apparently there is no difference between the red and the white quinoa in terms of nutritional values…but you might need to cook the red one a little longer than the white one and it seems a little more crunchy than the white one. So be my guest and use [...]
