Calamansi Poppy Seed Muffin

2018-06-18T11:16:08+00:00 Breakfast, Dessert/Sweet|

This is a recipe for a simple muffin, loaded with citrus flavors from calamansi and poppy seed. Great for breakfast or as a snack. Have you ever heard of calamansi? Well, I did by chance…years ago, I was looking for a dwarf orange family tree, and bump into this nice tree which at the time looked like a mandarin orange tree. After a few months I noticed that the fruits were tiny, they looked like the little cuties, but much smaller. I thought that the farmer made a mistake when placing the tag…It was then that I looked carefully at the tag…it said calamansi or calamondin. After a lot of search in the internet I learned that calamansi is a [...]

Almond Flour Chocolate Cake

2018-06-18T11:16:47+00:00 Dessert/Sweet|

This is a very simple recipe for a rich, dense and almost gluten free chocolate cake. The cake is moist and melts in your good! This simple chocolate cake is made mainly with almond flour…it is very…very…very moist, almost like brownie, fudge texture. It is indeed denser than regular chocolate cake, but it is so good…a small slice goes a long way so satisfying this cake is. The best part of it…this cake does not taste “old” even after a few days, actually it tastes better. I hope you get to try this recipe, I can assure you that you will not regret. This recipe was adapted from Jean-Georges, Home Cooking cookbook. Ingredients: 55g unsalted butter 8g all-purpose flour [...]

2018-06-18T11:19:47+00:00 Dessert/Sweet|

If you care for chocolate cake, this is the recipe that you definitely want to try..the cake is rich, moist and super chocolatey...with a hint to coffee. This cake is delicious, somehow light and at the same time kind of fudge…I cannot explain…it is perfect as it is or you can “dress it up” by serving with a dollop of freshly whipped cream, drizzled with a caramel sauce, maybe a salted one or if you are in the mood for more exquisite one with miso caramel sauce (recipe coming next week)…it is really up to you. My suggestion is if you are just serving as it is you might want to increase slightly the amount of sugar, although my husband [...]

Pumpkin Chiffon Cake

2018-06-18T11:02:56+00:00 Asian Inspired Recipe, Dessert/Sweet|

This is a great chiffon cake made with pumpkin puree…it is simple to put together…it is light and it sure makes a great dessert or even snack. I must admit that there is only a hint of pumpkin puree, therefore the cake is not overwhelmed with pumpkin and if you do not mention, your guests will never imagine that there is pumpkin in the cake in spite of the yellowish color. In this recipe I used the 3 ounce cylinder shape silicone bakeware…it was somewhat difficult to remove the chiffon cake from the mold due to its delicate texture, I had to be very careful… next time baking this cake it would be better to use a regular size cake [...]

This is a very simple recipe for butterscotch and oatmeal cookies. The recipe is a classic and the combination of chewy oat and flavorful butterscotch is just so good.  These cookies are awesome and so simple to make them…I pretty much follow the recipe from here, just cut down the sugar since the butterscotch chips are pretty sweet.  The oat gives a slightly chewy texture…so good! I hope you have a chance to try them…   Ingredients: ½ cup unsalted butter or 1 stick, softened at room temperature 2 tablespoons granulated sugar ½ cup brown sugar 1 large egg, room temperature 1½ teaspoons vanilla extract ¼ teaspoon salt ¾ cup all-purpose flour 1 ½ cup old fashioned oats ½ teaspoon [...]

Avocado Ice Cream

2018-06-18T11:23:03+00:00 Dessert/Sweet, Make-Ahead then Freeze it!|

This week I am sharing with you a recipe for avocado ice cream. This ice cream is really creamy, rich and amazingly smooth. There is a touch of vanilla and lemon juice, just like how we used to make avocado smoothie in Brazil. When living in Brazil, avocado was eaten as fruit, meaning that it was always made into cream or smoothie with sugar. So when I first was introduced to guacamole, I literally was disgusted…it was my first time tasting “salty” avocado…no need to say that I now love guacamole… Anyway, I saw a post from Ray at Wok with Ray a while ago were he made avocado ice cream, and I just thought…”Wow, how come I never came across avocado [...]

Brazilian Egg Yolk Custard with Coconut

2018-06-18T11:24:00+00:00 Brazilian Inspired Recipe, Dessert/Sweet|

This is a recipe for a Brazilian inspired recipe for egg yolk custard with coconut.  This is so creamy and rich, a traditional dessert from Brazil. Quindim is a popular Brazilian baked dessert made from sugar, eggs and coconut. It is extremely sweet (in most cases) and very much addictive. Since quindins (plural for quindim) are very ready available in almost every corner…yes, literally every corner…I did not have the need to bake my own when living there…now that we do not have this treat around I decided to bake my own…and of course to the internet I go…I came across hundreds of recipes…mainly they all have the same ingredients, varying only in ratio. As mention above, quindins are extremely [...]
