Homemade Lemon Curd

2018-07-23T16:08:36+00:00Dessert/Sweet, Make-Ahead|

Homemade lemon curd is much tastier than the store bought ones, it is so easy to make and only requires a few ingredients.  The color and flavor is pure summer…blasting with flavor, rich, creamy and so flavorful…   I love everything that has lemon in it…from bars to ice cream and our Meyer lemon tree was loaded with lemons, after picking them up and freezing some of them for making smoothie I still find myself with a lot of it…not to mention that we still have other kind of lemons tree in our backyard. Since I had made pavlova recently I found myself with leftover egg yolks and I absolutely dislike throwing food away, I thought that the best way [...]

Oladi, Russian Pancake

2018-06-18T11:13:37+00:00Breakfast, Dessert/Sweet|

This is a very simple recipe of a Russian version of what is our pancake.  The recipe calls for yeast as an raising agent.  It is fluffy and light, great for breakfast. I hope this post find you all well…as for us, we came back from a fantastic vacation. We explored Russia, from Moscow to St. Petersburg by cruising the Volga river and stopping at many cities along the way. It was a very nice experience visiting all the major touristic places…the churches, museums, parks, metro system and many others. After our vacation in Russia it is only natural to share a Russian recipe…and I choose this Russian pancakes, called oladi, which was served to us very often for breakfast [...]

Almond Flour Chocolate Cake

2018-06-18T11:16:47+00:00Dessert/Sweet|

This is a very simple recipe for a rich, dense and almost gluten free chocolate cake. The cake is moist and melts in your mouth...so good! This simple chocolate cake is made mainly with almond flour…it is very…very…very moist, almost like brownie, fudge texture. It is indeed denser than regular chocolate cake, but it is so good…a small slice goes a long way so satisfying this cake is. The best part of it…this cake does not taste “old” even after a few days, actually it tastes better. I hope you get to try this recipe, I can assure you that you will not regret. This recipe was adapted from Jean-Georges, Home Cooking cookbook. Ingredients: 55g unsalted butter 8g all-purpose flour [...]

Pumpkin Chiffon Cake

2018-06-18T11:02:56+00:00Asian Inspired Recipe, Dessert/Sweet|

This is a great chiffon cake made with pumpkin puree…it is simple to put together…it is light and it sure makes a great dessert or even snack. I must admit that there is only a hint of pumpkin puree, therefore the cake is not overwhelmed with pumpkin and if you do not mention, your guests will never imagine that there is pumpkin in the cake in spite of the yellowish color. In this recipe I used the 3 ounce cylinder shape silicone bakeware…it was somewhat difficult to remove the chiffon cake from the mold due to its delicate texture, I had to be very careful… next time baking this cake it would be better to use a regular size cake [...]

Basic Sweet Bread Dough (Water Roux or Tangzhong Method)

2018-06-18T11:21:26+00:00Asian Inspired Recipe, Bread|

This is an Asian inspired recipe for a soft, cottony and fluffy bread.  The dough is very rich because of the heavy whipping cream in it.  It is great as a loaf or as a base for all kind of rolls and bread. First of all, I want to apologize for the long time away from blogging…I hope you are all well and did not give up on me…I was literally very busy in the past months and after things got under control we went for a short vacation…now I am back and hope to pick up where I left…as you might know I love bread and since I started blogging, baking bread has been one of my many passions… [...]

Yeast-Raised Waffle

2018-06-18T11:24:13+00:00Breakfast, Dessert/Sweet|

These light and crispy waffles are made with yeast. It is true that the recipe requires extra steps but it is so worth the effort, I hope you get to try it! Have you ever made waffle using yeast? If not, you must give this a try…the texture of these waffles are very different from the ones that use baking powder. They are somehow lighter and crispy. It is hard to describe, once you try it you will know what I am trying to say… You can server these waffles like the other ones, I choose to drizzle with condensed milk instead of syrup and garnish with fresh raspberries, but fell free to color it the way you like. This [...]

Homemade Spinach Pasta

2018-06-18T11:25:40+00:00Freeze Ahead, Pasta and Grain, Vegetarian|

This pasta recipe calls for lots of spinach...it is so tasty and pretty to look at. The pasta can served topped with any sauce you and your family like or just with your favorite cheese.   Let me make a confession, this is not my first pasta…I made egg pasta once before I attempted to make this spinach pasta. It was so much fun playing with the dough, passing the dough over and over again through the pasta machine. Cutting it using different settings that I forgot to take pictures… I want this spinach pasta to be the “star” of this post, therefore, after I cooked I just served with a drizzle of olive oil and lots of shaved pecorino cheese…nothing [...]

Egg Salad Sandwich

2018-06-18T11:27:32+00:00Egg|

This is almost like "no recipes" post. After Easter don't we all have lots and lots of hard boil eggs? By simply adding mayonnaise, fresh ground pepper and chopped parsley you have a egg salad. I hope friends that celebrated Easter had a great time with family and friends…Easter means lots of eggs…I decided to post this “no recipe” egg salad sandwich…seriously, what can be easier than egg salad sandwich? I am sure that you all have your favorite recipe for egg salad…mine is very simple, only hard boiled eggs, mayonnaise, fresh pepper and fresh chopped parsley. I just added a layer of arugula on the egg salad and it was served in between 2 slices of chia milk sandwich [...]

Stir Fry Wheatberries

2018-06-18T11:27:55+00:00Asian Inspired Recipe, Pasta and Grain, Side Dish, Vegetarian|

This is a simple recipe for an Asian inspired stir-fry wheatberries with eggs and Chinese sausage. Just by substituting rice for wheatberries you will have a healthy version of fried rice. This is a very simple and fast recipe considering that you have cooked wheatberries. The recipe is similar to the Egg Fried Rice with Chinese Sausage…and it is great as a main dish since it contains veggies and protein. Wheatberries are wheat, I mean the whole wheat kernel except the hull. I personally like to wash and soak the wheatberries before cooking, usually overnight. Wheatberries are chewy and packed with nutrients and dietary fiber, therefore much healthier than plain rice. So if you like wheatberry it is good to cook [...]

Waffle Iron Churros

2018-06-18T11:29:49+00:00Dessert/Sweet, Snack|

These churros made with waffle iron are a treat for breakfast.  It is almost having dessert…especially when dipped in condensed milk…so good! Yes, here I am with another recipe using waffle maker…if I have not convinced to get one or take the one that you have stored somewhere in the house collecting dust, nothing will do… I found this recipe on Serious Eats, and I had to try…I halved the recipe since it was my first time and did not want to waste any if in case the churros did not turn out as expected…oh boy was I wrong! The churros came amazing…light with a layer of crispy cinnamon on the outside, so if you plan to make this, please please [...]
